Glossy, bright yellow zucchini are less likely to escape harvest leading to fewer football-sized zucchini accumulating on the counter, waiting to be shredded. Yellow zucchini also add a burst of color to sauteed vegetables. We like to saute them along with green zucchini, mushrooms, sweet red peppers and onions, which then stir into our homemade pasta sauce and finally pour over cooked fettuccine.
