Early Wonder is an heirloom beet variety prized for its tender, red bulbs and lush, green tops. Introduced simultaneously in 1911 by S.D. Woodruff and sons and F.H. Woodruff and Sons, Early Wonder quickly gained popularity, later being sold under the names "Nutting's Gem" and "Boston Crosby." Early Wonder is a fast producer of tender, 2 to 3-inch-wide beets topped by vibrant 18-inch-tall greens. Young leaves can be individually clipped around 30 days after sowing and used in salad mixes or wilting greens. Mature roots are ready to harvest approximately 50 days after sowing. Each packet contains a minimum of 100 seeds.
