Lina Sisco's Bird Egg was reportedly brought to Missouri in a covered wagon by Lina's grandmother in the 1880's. Bush-type plants produce excellent yields of buff-colored beans with fuchsia swirls and speckles. An occasional solid pink bean adds special interest to the mix. These beans are traditionally used as a dry bean and tend to hold onto their skins during cooking, making them a great option for recipes that require the bean to hold its shape, such as in soups or chili.
