Zea mays
Oaxacan Green is an heirloom corn variety that produces broad ears neatly packed with pearlescent green kernels. Sturdy plants grow 6–7 feet tall with excellent standability, typically producing one to two ears per plant. The dented green kernels are well suited for grinding into meal or grits, and they also make striking additions to fall decorations. More recently, the variety has attracted attention in the craft distilling community for its ability to contribute fig, pecan, and toffee-like notes to well-aged bourbons.

For many years, this corn was believed to have originated in the Oaxacan region of southern Mexico. However, recent research suggests that Oaxacan Green Dent is actually a renamed version of Ernest Strubbe’s Green Dent—a variety tracing back to a 1929 cross between Minnesota 13, a yellow field corn, and a black popcorn known as Black Beauty. Strubbe then spent nearly 40 years stabilizing and refining the strain before releasing it in the 1970s.
In light of this new evidence pointing to a domestic origin, we have begun transitioning this variety to a more accurate name. The original name is temporarily preserved here so heirloom enthusiasts searching for 'Oaxacan Green Dent' can discover the true story behind this popular corn. Our original description also remains below as part of the historical record and to preserve our characterization of the variety, which was cited in the research paper.
Pre-2026 Description:
Oaxacan Green Corn is an heirloom variety that reportedly originates from the Oaxacan region of Southern Mexico where it is used by locals to make tortillas and tamales. In the United States, Oaxacan Green Dent is a popular specialty corn used by distilleries and home brewers who report that it makes excellent moonshine and even better bourbon. However you use it, you'll appreciate the unique colors and subtle flavors that this variety imparts to your favorite recipes.
Despite its origin, Oaxacan Green corn's short stature and early maturity seem markedly more temperate in nature, and we’ve found it much easier to grow compared to other Mexican varieties. Plants produce beautiful wide ears with neatly packed kernels in various shades of green. Dented, capped kernels have a unique, almost pearlescent appearance making them great for fall decorations. Oaxacan Green grows 6 to 7 feet tall and matures approximately 95 days from planting. Each packet contains a minimum of 50 seeds.
