In our home, we love to cook pretty much any vegetable, but bok choy is our go-to veggie when suppertime sneaks up on us. It requires so little prep and just a few minutes of cooking time. A little butter and soy sauce and you’re done. Its mild flavor also makes it perfect for finicky eaters who are reluctant to try wilted greens.
