Edamame, also known as green soybean or vegetable soybean, is a type of soybean that has been selected for its fresh eating qualities.  Its cultivation dates back to at least the 13th century, with the famous Buddhist saint Nichiren Shonin mentioning it in one of his writings in the year 1275.  Edamame pods are typically boiled whole, salted and served in the pod, much like a peanut in the shell.  They're just as tasty and even more nutritious!
