A short-day variety, Red Burgundy is best suited for the southern United States. Plants will grow if planted farther north but will not produce as large of bulbs. Nevertheless, here on our Iowa farm we enjoy planting Red Burgundy onions for use as a fresh onion in salads or (our personal favorite) for marinating with cucumbers in a brine of sugar, apple cider vinegar, a pinch of salt and lots of black pepper. We use the same brine to make deli-style red onions, slicing the onions thin and then tossing in a few slices of beet for a vibrant red color. Our 4-year-old thinks they're candy and we're not about to correct him. Red Burgundy onions mature approximately 100 days after transplant. Each packet contains a minimum of 100 seeds.
