Which Vegetables Can Survive Frost? A Crop-by-Crop Guide

It happens every year. Those sweltering summer days—filled with barbecues, lawn mowing, gardening, and little feet darting through the sprinkler—have given way to one of my favorite times of year.

Fall brings hearty meals, campfires, football, and, for a few glorious weeks, some of the nicest weather of the year. We’re in that sweet spot now: comfortable temperatures, fewer mosquitoes, and a gradual slowing of the yard and garden chores that seemed endless just a month ago.

But we all know what’s coming.

Frost.

For gardeners, that first frost forecast brings a familiar set of questions: What needs to be picked? What should be covered? And what can safely stay in the garden?

The answers aren’t always obvious. Some vegetables are damaged by even a light frost, while others can freeze, thaw, and keep right on growing. Better yet, some actually taste better after a touch of cold.

This week, we’ll sort out what to harvest, what to protect, and which vegetables may still have their best days ahead of them.

What Frost Does to Plants

Before we drag out the bedsheets, it helps to understand what freezing actually does to plant tissues. Because while some plants are quite sensitive to the effects of frost, others have developed some pretty tasty subversions.

In fact, they might not even need your help, at least not today.

To begin, cold itself isn’t necessarily the problem. The real trouble begins when water freezes. Depending on the severity and duration of the freeze, plants can be damaged in several ways:

  • Ice formation: Ice commonly begins forming in the spaces between cells, drawing liquid water out of the cells around it.
  • Cellular dehydration: As water moves toward the growing ice crystals, cells shrink and become dehydrated.
  • Membrane damage: Severe dehydration and freezing can disrupt cell membranes, leaving them unable to function normally after thawing.
  • Direct freezing injury: During more severe freezes, ice may form inside cells themselves, which damages cellular machinery.

This is why frost-damaged leaves can look fairly normal while frozen, only to become dark, limp, or water-soaked as they thaw.

How much damage occurs depends on more than the lowest temperature. The length of the freeze, the plant’s stage of growth, and—most importantly—whether it has had time to acclimate to cold all matter.

Interestingly, this same freeze-and-thaw damage can be useful in the kitchen. When I preserve herbs for tea, I often opt to freeze the fresh leaves. When I’m ready for a cup, I pull out a few frozen leaves and steep them directly. Freezing ruptures the cells' membranes and releases their aromatic compounds so effectively that I’ll sometimes see tiny pools of oil floating on the surface of the tea. I explain the method in more detail in our post on growing herbs for tea. Just know that for the gardener, the effects of freezing aren't all bad. Sometimes you can use them to your favor.

Having been adapted for the cool, short seasons of Siberia, Perestroika tomatoes withstand cold better than most—but they're still tomatoes.  If frost threatens, better harvest what you can and cover the rest.

Frost-Tender Crops

Most of the vegetables we know and love weren’t born in cold climates. Many were domesticated in much warmer parts of the world, and even crops we think of as distinctly American—corn, beans, and squash—trace their origins to Mexico, Central America, South America, and other comparatively warm regions of the Americas.

In other words, these plants were developed under conditions that didn’t require a coat and mittens.

It’s no surprise, then, that our warm-season crops are usually the first to show signs of stress when the mercury drops. Tomatoes, peppers, beans, cucumbers, squash, melons, okra, and sweet corn have relatively little ability to protect their tissues from freezing, so even a light frost can cause serious damage.

For these crops, the first frost generally marks the end of the growing season. Tender leaves and stems may become dark, limp, or water-soaked after thawing as damaged cells lose their ability to hold water. Growing points are especially vulnerable, and once they are killed, the plant has little chance of recovering before colder weather arrives.

What to Harvest Before Frost

If frost is in the forecast, now is the time for one last trip through the summer garden:

  • Tomatoes: Harvest fruit that is already ripening and let it finish on the counter. Light green tomatoes that have reached full size can be wrapped in newspaper and stored indoors to ripen gradually. Don’t overlook the truly immature green ones, either—they’re perfect for green tomato relish or even green tomato pie. Yes, that’s a real thing!
  • Peppers & Eggplants: Pick them all. Peppers are edible at nearly any stage of maturity, from immature to fully colored and ripe. Likewise with eggplant.
  • Beans: Pick the plants clean. Fresh beans can be refrigerated for a few days until you have time to eat, can, or freeze them.
  • Cucumbers & Summer Squash: Harvest anything of substantial size.  Both are perfectly usable, and often better, at small sizes.
  • Summer squash: Pick anything large enough to use. Small zucchini and summer squash are often more tender than their full-sized counterparts anyway.
  • Winter squash and pumpkins: Harvest mature fruit before a hard freeze. Freezing can damage the rind and shorten storage life, so move cured or nearly mature squash somewhere protected.
  • Melons: Pick ripe or nearly ripe fruit. Most melons will not improve much once harvested too early, so very immature fruit may simply be a loss.
  • Okra: Pick every usable pod. The pods themselves are easily damaged by freezing.
  • Sweet corn: Harvest mature ears before a hard freeze, particularly if temperatures are expected to remain below freezing for several hours.

Can You Cover Frost-Tender Plants?

Yes, and when the first frost is followed by another stretch of warm weather, it can be worthwhile.

Row cover, blankets, sheets, or frost cloth trap some of the heat rising from the soil and can provide several degrees of protection. The cover should extend all the way to the ground, and heavier materials should be supported so they don’t crush tender plants.

But covering has limits. A light frost may be worth fighting. A prolonged hard freeze usually isn’t.

By late fall, the combination of colder nights, shorter days, and slower growth means that even a plant that survives may produce very little afterward. At some point, it makes more sense to harvest what remains and call the season complete.

Fortunately, our next group is much better prepared for the cold.

Frost-Tolerant Crops

Our cool-season vegetables tell a very different story. Peas, lettuce, beets, spinach, and many brassicas trace their origins to Europe, the Mediterranean, the Near East, and Central Asia—regions where cool autumns, cold winters, and wide temperature swings were part of life.

Many of these crops are also biennials, spending their first season building leaves, roots, or stems, surviving winter, and flowering the following year. Some even require a period of cold, known as vernalization, before they can flower.

For these plants, cold tolerance isn’t simply a useful trait—it’s part of their reproductive strategy. As temperatures fall, they undergo physiological changes that help protect against the dehydration, membrane damage, and ice injury we discussed earlier.

How Plants Prepare for Freezing

This process, known as cold acclimation, begins before the plant actually freezes. As days shorten and temperatures fall, cold-tolerant plants begin changing the chemistry and structure of their cells.

Among other things, they may:

  • Accumulate soluble sugars and other compounds that help cells retain water and reduce dehydration.
  • Alter their cell membranes so they remain more flexible at low temperatures.
    Produce protective proteins that help stabilize membranes, enzymes, and other cell structures.
  • Control where ice forms, encouraging freezing outside living cells rather than inside them, where ice crystals are much more destructive.

The result is not immunity to freezing, but a much greater ability to freeze and thaw without sustaining serious injury.

Kohlrabi bulbs harvested in fall are exceptionally sweet and mild, with a tenderness that rivals broccoli stems.

What to Do with Frost-Tolerant Crops

A light frost is usually no reason to empty the cool-season garden, but I don’t treat every crop the same way.

  • Cabbage: Mature heads can tolerate light frost, but if they’re ready to harvest, I usually bring them in—or at least cover them. There’s little benefit in risking a finished head.
  • Cauliflower: I’m similarly cautious with mature heads. The plants tolerate cool weather well, but the curds themselves are worth protecting.
  • Lettuce: Most lettuce can handle a light frost, but tender leaves are easy to protect and easy to damage. I generally cover it.
  • Spinach and other leafy greens: These are often surprisingly tolerant of cold, but a row cover can protect the leaves from cosmetic damage and extend the harvest much longer.
  • Peas: Established plants generally handle light frost well. Flowers and very young pods are more vulnerable, so cover plants if they are still actively producing.
  • Beets & Radishes: Leave them in the ground. The roots are well insulated by the soil, and a light frost is usually of little concern.
  • Kohlrabi: Light frost is rarely a problem. Harvest based on size and tenderness rather than the first cold night.
  • Mustard greens, chard, and bok choy: These generally tolerate frost well, though tender leaves may benefit from protection if temperatures are expected to dip much below freezing.

Root vegetables are especially easy to leave in place, since the surrounding soil protects the edible portion from a light frost. Hard freezes are another matter—but a few vegetables are hardy enough to withstand repeated freezes and may actually taste better because of them.

Many gardeners grow worrisome when their Brussels Sprouts are still sprout-less come August.  But I urge patience—Fall is their season to shine.

Cold-Hardy Crops

Then we come to the real cold-weather champions.

Kale and many of our other Cole crops descend from Brassica oleracea, a species with roots in the Mediterranean and coastal Europe. Its wild relatives grew in exposed environments where wind, cool weather, and dramatic temperature swings were nothing unusual. As these plants spread throughout Europe, gardeners selected them into an astonishing range of forms—from leafy kale to broccoli, cabbage, kohlrabi, and Brussels sprouts.

Kale and collards remain among the least radically modified members of that family, and their cold tolerance is impressive. I’ve harvested kale here in Iowa in January.

Cold-Hardy Vegetables

These cold-tolerant crops can withstand repeated frosts and, once acclimated, considerably colder temperatures than the vegetables we’ve discussed so far. When frost threatens, here's what to do with them.

  • Kale & Collards: Leave them in the garden. Established plants can withstand repeated freezes, and the leaves often become sweeter and milder as temperatures fall.
  • Broccoli & Brussels Sprouts: Mature, acclimated plants are remarkably cold tolerant. Unless truly severe weather is coming, I’m usually in no hurry to harvest simply because frost is forecast.
  • Carrots: Leave them in the ground as long as conditions allow. Cold weather can transform an ordinary carrot into something extraordinarily sweet.
  • Parsnips: Another crop that benefits tremendously from cold. Many gardeners deliberately wait until after several frosts before harvesting.
  • Turnips: If you think you don’t like turnips, try one harvested after a few cold nights. Frost mellows that strong, distinctly turnip-like flavor while bringing the sweetness forward.
  • Spinach: Established fall spinach can survive surprisingly low temperatures, especially beneath row cover or snow.

These crops aren’t invincible, but frost is often something to work with rather than fear. In fact, the same cold-weather adaptations that help many of them survive can dramatically change their flavor.

    Final Thoughts

    The first frost doesn’t have to mean the end of the garden. For some crops, it certainly marks the finish line. For others, it’s little more than a speed bump—and for a hardy few, it may actually be the beginning of their best season.

    So when that first frosty night shows up in the forecast, don’t panic. Harvest the tender crops, cover what needs a little help, and leave the cold-hardy vegetables to do what they do best.
